At Store Voldsgaard just south of Herning, Niels and his assistants make Søbogaards Kirsebærvin. The wine is made from organic sour cherries grown on Zealand by one of the few Danish growers of organic sour cherries. At Store Voldsgaard, the wine goes through a lengthy process where cane sugar and good humor are continuously added until it ends up with just the right alcohol percentage and sweetness.
